Here trainee staff gain knowledge of catering skills, food preparation, health and safety and communication skills. The café has built up a regular customer base and this has enabled the trainee staff to take on more responsibilities, which has resulted in the café becoming a ‘working’ environment rather than the ‘training’ project it was.
